Avocado and Goat Cheese Dip:

1 large avocado
2/3 cup fresh creamy goat cheese
juice of one lemon (or to taste)
1 Tblsp olive oil
salt, tobasco
Melba Toast (we used Onion Flavored)

Place first five ingredients in food processor and pulse to a smooth puree.
Serve with Melba Toasts cold or at room temperature.
